Known as "słonina" in Polish, this rich, creamy fat comes from the sides of the backbone of imported Imberico pork from Spain. Densely packed with meaty flavor, it can be served thinly sliced, used as a substitute for butter and other fats, or added to lean meat to make it moister and tastier. Available raw, smoked, or cooked with an herbal, paprika, or salt seasoning (shown here). Approximately 1lb.
